We think tart and fruity flavours complement the rich indulgence of complements the bitter-sweetness of our dark beautifully. We use limes which grow alongside our cacao trees on our Rabot Estate plantation in Saint Lucia to make our Lime Baby Truffle; tiny but intensely tangy.
For the daring, the bold, our Chilli Praline combines the gentle heat of habanero chilli with a mellow roasted hazelnut praline, wrapped in 70% dark for an added depth of cocoa flavour. Don’t worry – this leaves a pleasant tingle, rather than a fiery kick, so you won’t need a glass of milk handy to enjoy.
Sometimes, less is more, which is why our Simple Dark Truffle might be all you need to satisfy that cocoa craving. Surprisingly mellow, we’ve taken 85% dark, and whipped it into a ridiculously smooth ganache, and coated it in a thick layer of chocolate.
